  • 1 Box gf pasta
  • 2 tbsp of olive oil
  • 1 small onion chopped
  • 3 garlic cloves chopped
  • 2 scallion sliced
  • 3 bell peppers — red, yellow/orange, and green, all sliced
  • 1/4 cup of warm pasta water (Saved from draining the pasta)
  • 1 small tomato chopped
  • 3 tbsp of jerk seasoning
  • 1 tsp of turmeric
  • 1 can of full-fat coconut milk
  • Generous amount of nutritional yeast or vegan cheese ( I used both)

Baked 4 Cheese Macaroni & Cheese

Baked Mac & Cheese was my favorite food for many years and my family’s recipe was always the best in my bias opinion! I’ve had pretty good vegan mac & cheese at a few restaurants but none mastered baked mac & cheese like my mom and grandma. But, at last, I believe I’ve mastered it with this recipe and my family members agree! The best part about this vegan mac & cheese is that it will not cause high cholesterol or clog your arteries!


  • 1 box Modern table GF elbow pasta
  • 1/2 block Chao slices, chopped into pieces as pictured

Vegan + GF Chicken & Pumpkin Spice Waffles

Vegan + GF Chicken

  • ¼ cup non-dairy milk
  • 2 tablespoons apple cider vinegar
  • 1 cup brown rice flour
  • 1 tablespoon cornstarch
  • ½ teaspoon salt
  • ½ teaspoon cayenne pepper
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon white pepper
  • 1 tablespoon nutritional yeast
  • 3 cups olive oil
  • 4 large oyster mushrooms
  • Maple Syrup for serving
  • Sriracha for serving

  • 1/2 cup pumpkin puree
  • 3/4 cup non-dairy milk ( I prefer Oatly)
  • 3 tablespoons maple syrup
  • 1 & 1/2 tablespoons melted coconut oil
  • 3/4 cups + 2 tablespoons all-purpose gluten-free flour

As a Maryland girl let’s just say I know a thing or two about a good crab cake. Growing up I ate a lot of whole crab, crab legs, and crab cakes before becoming vegan. We like our crab cakes with almost no breading and lots of crab. I think my vegan version has nailed that with lots of heart of palm and minimal bread crumbs.
